If an ambulance had to be called to someones home, what would the EMT's do if the person had to be committed?

If the person refuses to go, then, the Paramedics have no choice but to leave. If the person is totally incoherent, and is endangering themselves and others, then, you need to call law enforcement and the EMT's to get them away from whatever is causing them hostility. That could get ugly.
